What do the Food Safety Team do?

We work to make Colchester a safe place in which to eat.

One of the ways we do this is visiting all food businesses in Colchester Borough to ensure they comply with food safety law. After the inspection, we award a rating under the national Food Hygiene Rating Scheme.

We visit food businesses in Colchester Borough, usually anonymously, and take samples of the food and drink. We then check the safety of the food by testing for bacteria at a laboratory.

We investigate complaints about poor hygiene or unexpected objects in food to see what went wrong and to reduce the chance of it happening again.

If you’re not sure whether the place you intend to run your business will be suitable, we’d suggest contacting us for advice before you have signed any lease or other agreement.

If we are notified of illness that is suspected of being caused by food, we will investigate. If you think you have food poisoning, please visit the Health Protection Agency site for advice.

We are also proud to be part of and promote the Healthy Eating Scheme. 

Last, but not least, we also manage the registration of food businesses and their approval where it is needed. 

What can I do to run my food business safely?

There are a number of things you can do to help run the business safely. The following are some suggestions but these aren’t everything you’d need to do – we recommend you check the Food Standards Agency website for the most up-to-date and complete information.

All food businesses are required to have a documented food safety management system. The Food Standards Agency have an example system you can use: Safer food, better business.

If you are running a food manufacturing business, it's likely that Safer food, better business won't be enough and you'll need a system with more detail such as Hazard Analysis Critical Control Point (HACCP). For more information on HACCP, please read the Food Standards Agency introduction or read our guidance.

Whoever is handling the food will need to be trained to ensure they know how to handle and produce safe food.
